Cooked fresh flat beans (Helda beans) with tomatoes and diced lamb ❤️

Although the sun in shining and Spring is definitely in the air, the evenings are still chilly and rather than cold salads, you still want something warm and soothing for dinnertime.

I love eating vegetable dishes and I think that adding some protein to vegetable dishes makes them much more filling and nutritious. My favourite combinations are peas with minced meat, leeks with minced meat and todays recipe – flat beans with diced lamb.

  
The diced lamb gives the dish a wholesome flavour and makes it an extremely nutritious meal for the whole family to enjoy.

Ingredients- (enough for 4)

  • 400grams diced lamb fillets
  • 1kg flat beans
  • 3 large tomatoes peeled and diced
  • 1 tablespoon olive oil
  • 1 large onion diced
  • 2 teaspoons sugar
  • 1 cup hot water
  • Sea salt to taste

Method –

  • First prepare the flat beans. With a sharp knife carefully peel the sides and cut in half.
  • In a heavy bottomed pan heat the oil. Add the diced onions and cook over a medium heat until cooked.
  • Add the diced lamb to the pan and stir occassionally until the meat is browned. Cover the pan and cook until the meat releases its liquids.
  • Add the diced tomatoes and cook until tender.
  • Finally add the prepared broad beans.
  • Add the sugar and salt. Add the hot water.
  • Leave to cook with the lid on over a medium heat until the beans are tender to taste.
  • Enjoy hot with crusty fresh bread.

  
Extremely nutritious and tasty, the flat beans, also known as Helda beans, are not only super healthy but so versatile they can be enjoyed cold or hot.
