The perfect chocolate cake πŸ‘ŒπŸ» crumbly, chocolatey & scrumptious! β€οΈ

I have been on the look out for a rich chocolatey cake recipe for a while. I wanted a cake which was more than just a sponge. More of a crumbly tart consistency. A recipe which was pure indulgence for those special occasions or just as the perfect weekend family treat.


I’ve been reading a great book by one of my favourite bloggers David Liebovitz. His book ‘The Sweet Life in Paris’ is super fun & cute, and filled with some great recipes which I am trying one by one.


So this is where I came across the perfect chocolate cake recipe that I am sharing with you all today! It is so easy to make and will wow your friends, family & guests. My boys loved it & one slice was not enough.

Recipe taken from The Sweet Life in Paris by David Leibovitz 

Ingredients-

  • 250grams Bittersweet chocolate chopped (I used Lindt dark)
  • 120grams unsalted butter
  • 65grams sugar
  • 4 large eggs separated
  • 2 tablespoons flour
  • Pinch of salt

Method –

  • Preheat the oven to 180 degrees celcius
  • Butter a 23cm loaf pan and line the bottom with a strip of parchment
  • In a large bowl set over a pan of simmering water, heat the chocolate and butter together just until melted and smooth
  • Remove from the het and stir in half the sugar, then the egg yolks and the flour.
  • In a stand mixer or with an electric whisk begin whipping the egg whites with the pinch of salt. Keep whipping until they start to form soft peaks.
  • Use a rubber spatula to fold one third of the egg whites into the chocolate mixture to lighten it, then fold in the remaining egg whites just until the mixture is smooth and no white streaks remain.
  • Scrape the batter into the buttered loaf tin and smooth the top.
  • Bake for 35minutes or until the centre feels slightly firm in the centre.
  • Let the cake cool then serve.

 

What is so great about this cake is it gets nicer as the days go on and can keep for up to 3days! I doubt you will have any left in 3days but just incase.
