“No Eggs, No Dairy, No Nuts, No Fuss” – Cake Mixes just like homemade! â¤ï¸

May 29, 2016

I read recently that up to 50% of all children in the United Kingdom suffer from some form of allergic condition. I have many friends whose kids are either allergic to nuts, dairy, eggs or all three. So I am always on the look out for the latest products on the market which offer the best alternatives for those with allergies.

I love cooking foods from scratch and have always enjoyed making things homemade, but in the modern world we live in time is of the essence and I am, and always have been, a big fan of cake mixes. In my opinion they are the best way to make homemade when you are short of time. And these mixes are perfect for those with allergies in the family.

The Product –

An inspirational story, Mrs.O was faced with a dilemma every Mother dreads – her daughter sadly developed food allergies to eggs, dairy and nuts specifically. At that moment, she gradually came to the realisation that she would need to radically alter the ingredients used for baking. Mrs.O wanted a cake that the whole family could enjoy together and most importantly, it tasted homemade! As a family, they all shared treats from the same platter and she wanted to ensure that no one felt left out because of their food allergies.

There was going to be no compromise when it came to selecting ingredients for her products; they had to be high quality Organic and also natural ingredients, and the cakes and biscuits must taste homemade!

Mrs. O’s cake mixes offer a wonderful selection of products made from the best ingredients –

  • Egg free, gluten free Vanilla sponge cake mix
  • Egg free gorgeous brownies
  • Egg free luxury chocolate cake mix
  • Egg free melt in your mouth biscuits
  • Egg free scrumptious Gingerbread mix
  • Gluten free, egg free Brownies mix

Verdict –

I was kindly sent ‘Mrs.O’s Gluten Free & Egg Free Yummy Vanilla Cake Mix’ to try for all you lovely people.

Here are the ingredients and method from the packet which I followed –

Ingredients to add to the mix –

  • 100grams warm melted sunflower spread
  • 200ml rice milk
  • 1tsp pure vanilla extract
  • 1 tsp white wine vinegar

Method –

  • Mix all the wet ingredients
  • Add to the dry cake mix
  • Place in a lined cake loaf tin
  • Bake in the oven for 45minutes at 180 degrees celsius

I always feel fresh blueberries compliment vanilla sponge cake perfectly, so I added a cup full of fresh blueberries to the mix before baking.

The cake was just perfect! The house smelt divine, just like my homemade cakes do.
