Iced green tea with pomegranates, blueberries & pink grapefruit πŸ’–

In London the weather is feeling more like a tropical island lately. Storms, heavy rain, followed by sunshine and humidity.

So it is time to replace soups with salads and hot drinks with icy refreshing beverages to cool down all over!

I was in the city last week to meet a friend and came across a favourite fast food store of mine Pret a Manger. 

Pret normally have prepared bottles of juice and smoothies but I was pleasantly suprised to see a selection of iced green teas on their menu. You could have it plain or with fruits. I had the Iced Green tea with pomegranates and pink grapefruit segments. All I can say is that it was fabulous! Not too sweet, not too sour, extremely refreshing and perfect for the hot weather.

So I investigated and was very happy to discover that the lovely people at Pret had put the recipe on their website for us to make the drink at home. I made it and it was just as good! I just added blueberries for that extra fruitiness!

Ingredients-

  • 1 red grapefruit
  • 6 green tea bags
  • 2-3 tbsp brown sugar
  • 2 pomegranates
  • 1 cup of ice cubes
  • 1 cup of blueberries 

Method

For the green tea blend (makes 6 glasses)

1. Bring 8 cups of water to simmer, then remove from heat

2. Add 6 bags of green tea

3. Let it steep for 3-4 minutes

4. Remove your tea bags and let it cool down

5. Pour into a pitcher, cover and refrigerate

For the iced green tea essence (1 serving)

1. Pop your grapefruit segments in a pestle and mortar

2. Add 2-3 tbsp of sugar and mix

3. Strain the juice (this is your essence)

4. Refrigerate in a small container

Make it –

1. Fill a tall glass with ice

2. Add your iced green tea essence

3. And finally, add a tbsp of fresh pomegranate seeds & a handful of blueberries 

4. Slowly pour in your chilled green iced tea blend and serve.
