Best Homemade Pancakes Ever! πŸ˜‹

Sunday mornings are very special in our home, it’s a time to relax, enjoy family time just lazing around in our pyjamas and doing whatever we want to do. 

My boys have all their clubs on Saturday that way Sunday is free to just laze around and do nothing! I think we all need one day a week like this to just relax.

Sunday morning breakfast is something my boys eagerly anticipate. ‘Mummy are we have a big breakfast today ?’ they will ask, and their faces glow with delight when the answer is yes.

We normally have scrambled eggs, fresh croissants, homemade jams, toast and definitely banana pancakes!

Before my very good Canadian friend Cheryl was kind enough to share with me her recipe for homemade Canadian pancakes, I used a well known brand of pancake mix.

But then I found out how much unnecessary sugar is put into mixes and how it is so much easier to just make your own mix at home.

So here is lovely Cheryl’s Canadian pancake recipe! It is so easy to prepare and you will get perfect fluffy pancakes everytime!

My boys like them with sliced bananas which caramalise as they cook, but you can easily add blueberries, strawberries or just enjoy them as they are!

Ingredients – (makes 2 large round pancakes)

  • 1 cup self raising flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 egg
  • 1 cup full fat milk
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 large banana thinly sliced
  • 2 tablespoons vegetable oil


  • Place the flour, sugar, baking powder, baking soda, salt in a large bowl.
  • Add the milk, egg and oil
  • Mix well until a batter is formed
  • Leave to rest & thicken for a few minutes
  • Lightly oil a non stick frying pan
  • With a laddle pour on half of the batter into the centre of the hot pan.
  • Leave to cook on a medium heat.
  • Once the batter starts to bubble carefully add in the thinly sliced bananas
  • With a large spatula flip the pancake and let the banana side cook.

Serve immediately with proper Canadian Maple Syrup!
