Buckwheat salad topped with orange segments & super foods ðŸ’š

This is my favourite salad of the moment! Over the Christmas holidays we were in Turkey and I must have eaten this salad several times. I’ve already written about my love of grains of all shapes and sizes in past blog posts, but buckwheat is my current favourite.

What I love most about buckwheat is its nutty flavour. It’s unlike anything I have ever eaten before. Extremely filling and super easy to prepare.

You can make the base for the salad and top it with grilled chicken, grilled salmon fillets or just enjoy as it is.

The recipe below has been adapted from where I first enjoyed this salad – The House Cafe chain of restaurants in Turkey. It is such a good salad that when finished I wondered if I should order another!

Filled with the most scrumptious super foods – buckwheat, beetroot, fresh greens, avocados and the most delicious vinegrette & topped with citrusy orange segments! Yes orange segments make this a super summery salad.



Ingredients- (enough for 4 people)

  • 1 cup of buckwheat – cooked like rice and left to cool
  • Fresh baby spinach leaves
  • red and yellow baby tomatoes
  • 1 avocado
  • Feta cheese
  • Cooked baby beetroot
  • Orange segments

Dressing –

  • 2 tablespoons Extra Virgin Olive Oil
  • 1 tablespoon Balsamic Vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • a little squeeze of lemon juice

Method –

  • First;y cook the buckwheat. 1 cup of buckwheat will need 2 cups of water to cook properly. You want it to be al dente, not too soft.
  • Once cooled, spoon onto a nice serving plate. Split evenly between 4 plates.
  • Start building the salad – add the diced avocado, spinach leaves, baby tomatoes, sliced beetroot, crumble on some feta cheese.
  • Finally add a few segments of orange.
  • In an empty jar add all the dressing ingredients and shake the jar until you get a creamy dressing.
  • Drizzle over the dressing and mix. Add sea salt and ground black pepper.
