Tangy, tasty & healthy Cream of Tomato soup â¤ï¸ðŸ…

Last week the temperatures in London were around -5 degrees Celsius! So I decided the boys should have a nice warm bowl of soup for dinner with some crusty crunchy bread.

Soup has got to be one of my all time favourite meals in the winter months. Its not only warming and filling, it is also so nutritional filled with the best vitamins and minerals for a healthy immune system.

So I set out to the supermarket for some vegetable inspiration for my soup of the day. Looking around my favourite local Waitrose store I came across the ready made soups in large plastic containers. They did look yummy, but nothing beats homemade soup so I headed for the vegetable aisle.

When you are short on time tomato soup is a sure winner. It is easy to make, so yummy and everyone in my family loves it! Here is my recipe for homemade Cream of Tomato soup made from scratch!-

  

Ingredients – (makes enough for 4)

  • 1 large jar of Passata
  • 1 medium onion finely diced
  • 3 carrots peeled and finely sliced
  • 2 tablespoons Extra Virgin Olive oil
  • 2 Knorr Chicken Stock Pots
  • 2 teaspoons sugar
  • Sea Salt & Ground black pepper to taste
  • 1 cup of full fat milk

Method

  • In a large heavy bottomed pot heat the olive oil. Once hot add the diced onions, carrots and mix over a medium heat until vegetables have softened.
  • Add the Passata, sugar, chicken stock pots and mix well.
  • Cook over a low heat until it resembles a thick sauce.
  • Add in 2 cups of hot water. Sprinkle in sea salt and pepper to taste.
  • Once cooked carefully blend with a hand blender to form a thick purée.
  • Finally add in the cup of milk and stir. The milk will make it creamy.

Serve in a beautiful bowl, sprinkle with dried mint, chilli flakes and even a little grated mozzarella. Serve with crusty fresh bread.

    Looks amazing! I love tomato soups very much but have never tried making them with milk >.<
