Homemade Meatballs with potatoes & tomatoes â¤ï¸

Today I am super excited because I am sharing with you all the family recipe for one of my all time favourite dishes.

When we were little, coming home from school to be greeted by my mother, who was also a stay at home mummy like myself, the house warm and cosy, and smelling of this scrumptious dish loved by kids and adults alike.

What is so great about this dish is that it is cooked in one big pot, so super easy to heat up and serve. The preparation isn’t as difficult as it may seem. I prepared the homemade meatballs and peeled the potatoes in around 30 minutes, and the dish cooks in around 20minutes. Not even 1 hour.

So here is the yummy recipe passed down from my grandmother to my mother, and from my mother to me…

  
Ingredients – (makes enough for 4)

For the meatballs-

  • 500grams lean beef minced meat
  • 1 medium onion finely chopped
  • 1 free range egg
  • 1 tablespoon flour
  • Sea salt & ground black pepper to taste
  • 1 teaspoon cumin

For the pan-

  • 4-5 medium sized potatoes (peeled)
  • 1 tablespoon olive oil
  • 2 large tomatoes peeled and chopped
  • Sea salt & ground black pepper 

 

Method –

– Firstly prepare the meat balls. Place the minced meat, diced onion,  egg, flour, cumin, salt & pepper in a mixing bowl. Roll up your sleves and with clean hands mix the ingredients to form meatballs. 

 

 
– Next form small meat balls from the minced meat mixture and set aside.

– In a large heavy bottom pan line up the potato slices. 

– On top of the potatoes  line up the meat balls.

  

– Finally spoon on the chopped tomatoes, add 1 cup of hot water and drizzle on a little olive oil, sea salt & pepper.

– Leave to cook on a medium heat for 20-25 minutes with the lid on. Will be ready once meatballs are cooked through and the potatoes are tender.

Enjoy as it is with crusty bread or accompanied with bulgur rice.
