Okra with Chick peas cooked in olive oil πŸ’š the perfect summer dish

Yesterday I wrote about the wonders of this super green vegetable – Okra. Today as promised I want to share with you this easy peasy recipe.

I love Okra so much my mother and I have made this dish several times over the summer. It is not only extremely healthy, it is a great accompaniment to my Tabbouleh and bulgur rice, recipes also on my blog.

So when the weather is hot, you’ve got guests coming over, make a big dish of Tabbouleh, and a big dish of this Okra & Chickpea dish, and let your guests help themselves. It is the perfect alternative to meat when having a barbecue. You vegetarian friends will not be disappointed.


The chickpeas add a meat free meatiness to this dish. Okra once cooked is extremely light and easily digested. The chickpeas will not only fill you up but will add that extra healthy goodness to this meal as they are a superb source of vegetarian-friendly protein.


Ingredients – (serves 4)

– 1 kg of Okra – fresh or frozen

– 1 tin of precooked chickpeas

– 1 large onion finely chopped

– 3-4 cloves of garlic finely chopped

– 2-3 tablespoons of Extra Virgin Olive oil

– 3 large tomatoes peeled and roughly chopped

– 1 teaspoon of brown sugar (to balance out the acidity of the tomatoes)

– Sea salt to taste

– 1 glass of boiling water

– Juice of 1 lemon – to prevent the Okra from discolouring

Method –

– Place the onions, garlic and tomatoes in a deep pot, drizzle over the olive oil and cook over a medium heat until the ingredients are soft and tender.

– Add in the washed Okra. If using fresh Okra you can cut off the stem and chop in halves if the Okra is too big.

– Pour over the juice of 1 lemon (make sure no pips are in it)

– Add in the sugar and sprinkle on salt. Pour over the water. Stir well and leave to cook over a low heat with lid partially on.

– Once the okra is tender to taste add in the washed and drained chickpeas.

– Cook for a further 5-10 minutes.

– Remove from heat and spoon carefully into a pyrex dish to cool.

– Enjoy warm or cold from the fridge.

An absolutely yummy dish!
