A Super Vegetable filled with goodness to nourish inside & out – Okra πŸ’š

It is very hot where I am now so the best foods to eat are salads and cold vegetable dishes. It is actually a great way to detox your body by cutting out red meats, chicken and hot foods, and just using the amazing array of fresh vegetables, pulses and salads on offer to combine and make refreshing meals. 

I actually feel fitter and so much lighter since having cut out meats, I may consider becoming a vegetarian. A vegetarian who eats fish though, I do love fish.


Today my mother and I decided to cook Okra. For those of you who haven’t heard of Okra, it is a green finger like vegetable originally from Africa, now widely used in cuisines such as Caribbean, Creole, Cajun and Indian. 

The green, slightly fuzzy pod contains rows of edible seeds that release a sticky juice when chopped and cooked. It has a delicate flavour which is refreshing and delicious.

Okra is known for it’s high vitamin C, vitamin K, and folate content. It is also known for containing a superior fiber which helps with digestion, stabilizes blood sugar, and helps to control the rate at which sugar is absorbed. 

Okra is also a super food for the skin! Boil the okra until very soft. Mash with a fork and smooth over your face as you would a mask. Leave for 5-10 minutes. Once rinsed off you will be left with soft, refreshed and rejuvenated skin. So amazing!
