The perfect Mediterranean brunch – Eggs cooked in fresh tomatoes & peppers

Eggs are one of my favourite ingredients ever! So versatile they can be eaten for breakfast, lunch and dinner, and I have had eggs for dinner on several occasions. So healthy they can be added to dishes for an extra boost of protein.

One of my favourite dishes growing up were eggs cooked the Turkish way; with freshly chopped tomatoes, green peppers, onions and herbs. ‘Menemen’ as it is called in Turkey is a speciality of my mother who is an amazing cook! The best part of eating this yummy Mediterranean dish is dipping fresh crusty bread in the juices.

So here is the recipe for you to try for yourselves and add a little bit of the Mediterranean to your breakfasts and brunches.

Ingredients- (makes enough for four)

– 8 eggs (whisked gently in a bowl)

– 3 large tomatoes peeled & grated

– 1 green romano pepper very finely sliced

– 1 small onion finely diced

– Sea salt & ground black pepper to taste

– 1 tablespoon of Extra Virgin Olive oil

Method –

– Place the oil in a pan. Heat slightly. 

– Add in the grated tomatoes, peppers and onions. Cook well on a medium heat until all have cooked and combined thoroughly. 

– Add in the eggs and mix together with the tomatoe combination on a medium heat. Leave until eggs have cooked.

– Add salt & lots of black pepper to taste.

Enjoy with a large glass of tea or cup of steaming coffee, and fresh crusty rye bread!
