Summer is definately here, it’s time to leave soups behind for a few months and get crazy with salads! I love versatile foods, vegetables or fruits which I can eat alone, add to cold dishes or add to warm dishes to give them an extra bit a pizzazz. I think I have found the perfect addition to any dish or table for that extra little bit of spice, tanginess and colour. 


Peppadew are experts at peppers, and boy are these peppers good! They are so scrumptious and moorish you will find yourself just opening a jar to take a little taste and then the whole jar is finished!

Roasted Red Peppers- 

Grown until perfectly firm and plump when they are carefully picked and de-seeded before being hand cut into whole generous portions. They are flame roasted as this retains their natural taste and colour. Roasting peppers is very popular in the Mediterranean but it is no easy feat! Peeling the skin off can be very messy and time consuming. But with Peppadew its all done for you! A bright red colour, these roasted red peppers are so meaty and tasty. Keep a jar handy to add that extra delight to any salad, pasta dish or just any antipasti plate. 

Mild & Hot Piquante Peppers – 

A jar full of the cutest tastiest baby red peppers. These come in two varieties – mild and hot. The mild baby peppers have an amazing tang and a slight sweet spiciness which leaves a lovely tingling after taste. Again a lovely addition to any salad, pasta or hot dish. A lovely snack and antipasti. 

Piquante Peppers stuffed with cheese –

For an amazing taste sensation the geniuses at Peppadew have combined creamy cool cheese with the sweet heat of these little peppers. Great with pasta and salad, but absolutely amazing just as they are. So definitely moorish. 

Recipe – Sweet Pepper Salad 

This salad is just so yummy. A healthy Medittereanean dish filled with super foods your whole family will love. Serve for lunch, dinner, or a starter to begin a meal. 


Ingredients – (serves 2) – 

-Fresh green leaves 

– Peppadew Roasted Red Peppers cut into large slices 

– 1 bunch of chopped parsley 

– 1/2 cup of cooked bulgur wheat (recipe on a previous post) 

– 1/2 cup of slightly cooked edamame beans 

– 1/2 cup of cooked fresh corn 

– 50grams of feta cheese 

– a handful of green pitted olives 

 Dressing – Extra Virgin Olive oil & freshly squeezed lemon juice 

Method – 

– It couldn’t be easier. Place the green leaves in a large salad bowl. Pour over all the ingredients – Peppadew roasted red peppers, cooked bulgur wheat, edamame beans, sweet corn, crumble on the feta cheese, olives. Drizzle over the olive oil and lemon juice. Add sea salt and fresh ground pepper. 

Such a yummy, fresh, healthy Summer treat!
