Fantastic Fish Pie filled with salmon & dill! Super easy to make & so delicious

Sometimes all you want is a dish freshly out of the oven, to fill you with warmth, reassurance and happiness that the world we live in is a good place after all. Flaked pieces of fresh salmon, with a creamy buttery sauce, topped with fluffy white mashed potatoes and sprinkled with cheese. A fish pie is the essence of home cooking. It is a good wholesome family meal at its best.

Traditional recipes call for a meaty white fish to be used in the pie, my recipe uses boneless and skinless salmon fillets, not only because I believe salmon is one of the healthiest fishes around but also because it is my boys favourite.

This is a very easy recipe, even though everything is made from scratch it has just three main steps to perfect pie.

Ingredients – (Makes enough for 4)

– 500gr skinless boneless salmon fillets

– 500ml full fat milk

– 1 small onion quartered

– 4 whole cloves

– 2 bay leaves

– small bunch of chopped dill

– 100gr butter

– 50gr plain flour

– pinch of freshly grated nutmeg

– 1 kg floury potato, peeled and cut into chunks

– 50gr grated cheddar

Method –

Step 1 – Poach the fish

In a deep frying pan place the fillets of salmon. Pour over the milk. Stud each quarter of onion with a clove, then add to the milk, with the bay leaves. Bring the milk to the boil. Once you see a few bubbles reduce to a low heat a leave to simmer for 10minutes or until the salmon is cooked through.

Gently remove the fish and place into the pie baking dish, flake with a fork. Sprinkle over the freshly chopped dill. Leave the milk to cool, you will need it later.

Step 2 – Make the sauce

Melt half of the butter in a saucepan, add in the flour and mix over a low heat until combined. Take off the heat, pour in a little of the cool poaching milk in and stir until you form a sauce. Keep adding more milk and mixing until the sauce is smooth. Return to the heat and boil and cook for a further 5minutes.

Add sea salt, ground black pepper and nutmeg to taste, pour over the fish.

Step 3 – Mashed potato topping

Peel, cut into squares and boil the potatoes until soft. Drain and mash the potatoes until there are no lumps, add in the remaining butter and milk.  Spoon onto the top of the pie, push the mashed potatoes right to the edges of the pie so the filling is sealed. Fluff the top with a fork, sprinkle on the cheese.


Bake the pie in a preheated oven at 180 degrees C for 40minutes or the top is a golden colour.

You can make this yummy dish a day ahead.
