A magical light creamy dessert everyone will love! ππ
I have a terribly sweet tooth! That is why I am always on the look out for light desserts, something to supress the cravings without piling on too many pounds. With summer approaching I thought this would be a perfect recipe to share with you all.
Not only is this dessert extremely easy to prepare, it is refreshing and fruity, a perfect end to those summer al fresco meals! A dessert my mother used to make for us as kids, and one I make my boys!
As far as the magical part of this dessert, mix the ingredients, place it in the fridge, say ‘abracadabra’ and let the magic begin! Your kids will love this!
Ingredients – (will be enough to serve 4-6)
– 2 packets of pineapple jelly (can be made with any flavour)
– 1 pint boiling hot water
– 2 packets of Birds Dream Topping (a powder which forms into a thick whipping cream when mixed with milk) – you could use whipped cream too.
– 200ml of milk ( you can use almond, soy or lactose free) – to form the cream if you are using dream topping.
Method-
– First dissolve the jelly in the boiling water. Leave to cool.
– Make the Dream Topping by whisking with the milk with a hand mixer or in a stand mixer until it forms a thick whipped cream consistency.
– Mix the liquid jelly and dream topping together until completely combined.
– Place in a deep rectangular dish.
– Put in fridge to set for at least 1 hour, better if left overnight.
Once set cut yourself a large slice and once on your plate you will see how ‘magically’ the cream lifts and seperates from the jelly, leaving a beautiful coloured glass like jelly on the bottom cream on the top dessert.
My boys ate two slices each yesterday!
