Hazelnut & Chocolate Cupcakes! Filled with ‘JimJams’ Sugar & Gluten free hazelnut chocolate spread ðŸŒ°

I absolutely adore hazelnuts! They are the most moorish delicious member of the nut family in my opinion. 
Hazelnuts are also extremely healthy. They are rich in dietary fibre, vitamins and minerals, that altogether protect against diseases and cancers.

Today to celebrate World Baking Day I have an absolutely yummy recipe for you! Not only are these cupcakes just amazingly tasty, they look beautiful and are also healthy.

    
This recipe is from one of my favourites The Hummingbird Bakery cookbook, but I have used wholemeal flour, and the yummy JimJams sugar and gluten free hazelnut and chocolate spread, which I wrote about in an earlier post, to make the cupcakes a little healthier but just as yummy! 

Ingredients- (makes 12 cupcakes)

For the cakes –

– 100grams wholemeal flour

– 20 grams cocoa powder

– 140grams caster sugar

– 1 1/2 teaspoons baking powder

– a pinch of salt

– 40grams butter

– 120ml whole milk

– 1 egg

– 120grams Jim Jams Chocolate & Hazelnut spread (http://jimjams-spreads.co.uk)

For the Hazelnut & Chocolate Icing –

– 200grams icing sugar

– 80grams unsalted butter

– 25ml whole milk

– 80grams Jim Jams Chocolate & Hazelnut spread (http://jimjams-spreads.co.uk)

Method-

– Preheat the oven to 170 degrees centigrade.

– Put the flour, cocoa powder, sugar, baking powder, salt and butter in a stand mixer, or in a bowl with a hand mixer, and mix until it reaches a sand like consistency.

– Slowly pour in the milk, and mix until combined. Add the egg and mix until a smooth mixture is reached.

  
– Pour the mixture evenly into the cupcake cases. Bake for 20 minutes or until the cakes turn a golden brown.

  
– Once the cupcakes have cooled, hollow out a small section of each cupcake and spoon in a small amount of the Chocolate & Hazelnut spread.

  
– Now to make the icing – Beat together the icing sugar and butter in a stand mixer or with a hand held mixer. Slowly add in the milk and mix at a fast setting until totally incorporated. Slowly stir in the Chocolate & Hazelnut spread by hand until incorporated.

  
– Spread the rich gooey icing evenly over each cupcake. Decorate with chocolate sprinkles or a few hazelnuts.
