The most delicious Chocolate Chip Cookies πŸͺπŸͺπŸͺπŸͺ

Chocolate Chip cookies have been a firm favourite of mine since my time living in the United States. 

For me the perfect choc chip cookie is crisp on the outside, soft and slightly gooey on the inside with the melted chocolate chips blending into the gorgeous cookie dough.

On my return to the UK I tried lots and lots of recipes to try and create the same texture and flavour of my favourite US cookie. Eventually I found my favourite thanks to one of my favourite baking sites Joyofbaking.com.

So here it is, in my opinion, the best Chocolate Chip Cookie recipe ever for American style Chocolate chip cookies!

Ingredients – 

220grams unsalted butter

150grams granulated white sugar

160grams light brown sugar

2 large free range eggs

1 1/2 teaspoons pure vanilla extract 

300grams plain flour

1 teaspoon baking soda

1/2 teaspoon of salt

1 1/2 cups of milk or dark chocolate chips

Method –

Preheat the oven to 190 degrees centigrade and line a baking tray with baking parchment.

In a stand mixer, or a bowl with a hand mixer, blend the butter until it is soft and creamy. Add the white and brown sugar and mix until light and fluffy. Add in each egg and the vanilla extract. Blend until all ingredients are incorporated.

In a separate bowl combine the flour, baking soda and salt. 

Add the dry ingredients to the wet mixture and blend until completely incorporated. Add in the chocolate chips and mix a little more.

Now this is the important part! Place the cookie dough in a bowl, cover the bowl with cling film, and leave the dough to chill in the fridge for 30minutes. This will make a firmer dough and prevent the cookie from spreading uncontrollably in the oven.

Use a large spoon. Slowly place each spoonful of dough on the baking tray. Leave 2cm of space in between each dough piece as these do spread. You should get around 20 cookies. 

Bake for 10-15 minutes or until the cookies are golden brown.

Enjoy with a large glass of ice cold milk! Or ice cold Almond milk in my case as I’m dairy free at the moment!
