Victoria Sponge made with the most delicious organic mixed berry jam! ❤️

My boys absolutely adore jams, their all time favourite is berry jam – strawberry, raspberry & blueberry. 

An all time favourite treat in our household is the classic yet irresistible Victoria Sponge cake! Soft fluffy sponge filled with a thick layer of gooey red berry jam! My husband isn’t a big fan of cream so I’ve always made my Victoria Sponge cakes without, but that is completely up to you. I do find it is a lighter treat without the cream.


I used an extra special jar of jam in todays cake, which is what this classic recipe deserves. Certified organic by the Soil Association , this berry jam from In a Jar is just like homemade! The process begins with cooking organic fruit in small batches, then mixing in organic sugar. Tiphereth add some pectin to some of their jams to help them set.

This Victoria Sponge recipe is adapted from one from the classic and elegant baker Mary Berry, whose recipes always work perfectly.


– 4 free range eggs

– 225grams caster sugar

– 225grams Organic Light Brown Self raising flour

– 2 teaspoons baking powder

– 225grams butter (soft at room temperature)

For the filling-

– The best quality mixed berry jam – my choice was Tiphereth In a Jar Mixed Berry (


– Preheat oven to 180 degrees centigrade 

– Grease and line two 20cm round baking tins

– Place the eggs, sugar, flour, baking powder and butter into a large mixing bowl and mix with a hand mixer or in a stand mixer until all ingredients have been incorporated.

– Divide the cake mixture evenly between the two tins.

– Bake for 25mins or until the cakes are golden brown.

– Set aside to cool completely. Gently remove from tins.

– Now the fun part. Place one cake on a serving dish upside down. Spread on plenty of the gorgeous jam. Spread evenly with a palate so the top of the first cake is covered. Then place the second cake on top right side up. Press gently so they stick together, and don’t worry about any jam oozing out of the sides! 

– Sprinkle on some icing sugar with a sieve to decorate.

Enjoy a big slice with a large cup of steaming hot green tea!
