Spicy Red Lentil Soup ❤️

I just cannot stop making a weekly batch of soup for my whole family to enjoy. Be it Winter or Spring or even Summer (I have a super cold Summer soup recipe), soup will always find a space on our dining table. What’s not to love about soup? It’s filling, nutritious and so easy to make. My kids love it!

  
This spicy red lentil soup is absolutely scrumptious. It is also extremely nutritious as it is filled with the super pulse – red lentils.

Red lentils are a very good source of cholesterol-lowering fiber, they not only help lower cholesterol, they are of special benefit in managing blood-sugar disorders since their high fiber content prevents blood sugar levels from rising rapidly after a meal. These little red beans also provide excellent amounts of minerals, vitamins and protein with no fat. In fact one cup of lentils has only 230 calories!

This soup is so filling and wholesome it is a meal in itself. If you have anyone in the family feeling poorly with a cold, this is the magic soup to make. It will fill them up and give them the vitamins they need.

Ingredients-

– 1 cup of Organic Red Lentils

– 1/2 cup brown basmati rice

– 1 cup Passata or freshly chopped tomatoes 

– 2 small onions (finely diced)

– 2 carrots (peeled and finely diced)

– 2 tablespoons Olive oil

– 1 knorr Chicken pot stock

– 1 teaspoon of brown sugar

– Sea salt, ground black pepper & chilli flakes to taste

Method-

Place the lentils, rice, carrots, onions and tomatoes in a large saucepan.

Cover with enough water so that all ingredients are covered. Boil until all the ingredients are soft to the taste.

Leave to cool then with the use of a stick blender mix the ingredients into a purée like consistency, make sure it is lump free.

Add enough warm water to make the purée into a more soup like consistency. Add the olive oil, chicken stock, sugar and sprinkle on a little sea salt & pepper. Mix over a medium heat until all ingredients have dissolved. 

Sprinkle on chilli flakes and serve with warm crusty bread.
