Homemade wholemeal blueberry scones 💙

Scones are a British institution, a bread like dough baked to perfection. Leave to cool, cut in half, spread on some butter and jam, or even clotted cream, a perfect accompaniment to tea or coffee for a mid afternoon treat.

  
These blueberry scones are also super healthy. Made with wholemeal flour, very little added sugar, and filled with big juicy blueberries they are utterly delicious. 

So easy to make, they will be ready in less than 15minutes in the oven. My boys love them spread with a little butter and gooey red raspberry jam. I love them just as they are.

I adapted this recipe from a Joyofbaking.com recipe. 

Ingredients-

– 2 cups wholemeal flour

– 1/3 cup granulated white sugar

– 2 teaspoons baking powder

– 1/4 teaspoon salt

– 6 tablespoons cold unsalted butter, cut into pieces

– 1 cup fresh blueberries 

– 1 large egg, lightly beaten

– 1 teaspoon pure vanilla extract

– 1/2 cup full fat milk or buttermilk 

Method –

– Preheat oven to 200 degrees centigrade.

– Line and grease a baking tray.

– In a large bowl, whisk together the flour, sugar, baking powder and salt. Cut the cold butter into small pieces and blend into the flour mixture with a blender or your fingertips. The mixture should look like coarse crumbs. 

– Gently fold in the blueberries. In a separate bowl whisk the beaten egg with the vanilla and milk. Add this mixture to the flour mixture and stir just until the dough comes together. Do not over mix the dough or the scones will be tough.

– Transfer the dough to a lightly floured surface and gently knead the dough.ake sure it is around 3cm thick.

– With a round cookie cutter cut out round shapes. Gently place the scones on the baking tray.

   

 – Bake for 15-20minutes or until the scones are golden brown.

Once cool gently cut in half lengthwise with a sharp serrated knife and spread on the butter, cream and jam of your choice. Scrumptious!
