Crunchy on the outside, moist on the inside, yummy homemade Chicken Goujons 💛

I have something to admit, up until last year I bought breaded chicken and fish fingers pre prepared from my local supermarket. Then I came across a lovely cookbook by Annabel Karmel where I found a super easy recipe for homemade goujons which I have used ever since. 

These are just delicious. They are wonderfully moist on the inside with a crunchy breadcrumb coating on the outside. My boys love them, so much so that they will no longer eat the store bought variety. These goujons are much healthier than the store bought variety, whats nice is that they are homemade, so you know exactly what is in them!

Ingredients – (enough for 4)

– 500gr mini Chicken breast fillets

– 2 cups homemade breadcrumbs 

For the marinade-

– 1 tablespoon Soy sauce 

– 1 tablespoon Worcestershire sauce 

– 1/2 teaspoon Dijon mustard 

– 3 tablespoons Olive oil

– Sea salt & ground pepper to taste

Method-

– First marinate the chicken fillets. 

– Mix together the Olive oil, soy sauce, mustard and Worcestershire sauce until combined.

– Place the fillets in a glass bowl, pour over the marinate sauce. Mix until all the fillets are covered in the sauce. Add sea salt & ground black pepper.

– Cover dish and place in the fridge for 4-5 hours, or even overnight.

To prepare & cook goujons-

– Preheat oven to 200 degrees centigrade.

– Add the breadcrumbs to the marinated goujons. Mix well so that the goujons are coated in the breadcrumbs.

– Place the goujons on a greased baking tray. 

– Bake in the oven for 20minutes or until the breadcrumbs turn a golden brown.

Enjoy with a side dish of Tabbouleh, salad or bulgur rice.
