Big Beautiful Blueberry Muffins everytime ðŸ’™

I think blueberries are one of my all time favourite fruits! They are just so sweet and scrummy I sometimes have to do a double take to just check that I am actually eating handfuls of a super fruit.

Blueberries are packed full of antioxidants, vitamins C, vitamin K and fibre. The antioxidants can help slow down ageing, can help with heart disease, the fibre content can prevent constipation and help with digestion. The list is endless, one research study even found blueberries can help reduce belly fat! No wonder they have such a superstar status.

Blueberry muffins are just the epitome of beauty on a plate. Especially when they rise, the cakey bit is a cloud of white fluffy sponge, and the baked juicy blueberries burst open to release a blue gooey goodness all over the cake.

I have tried lots of blueberry muffin recipes to get the perfect one. This recipe adapted from one of my favourite baking recipe websites works every time, thank you joyofbaking.com. I have used Spelt flour instead of white flour for its health benefits and its nutty flavour, and brown sugar instead of white.

Ingredients –

– 1 large egg

– 1 cup low fat plain yogurt

– 1/3 cup vegetable oil

– 1 teaspoon pure vanilla extract

– 2 cups Spelt flour

– 1/2 cup brown sugar

– 1 1/4 teaspooons baking powder

– 1/2 teaspoon baking soda

– 1/4 teaspoon salt

– 2 cups of fresh blueberries

Method-

– Preheat oven to 190 degrees centigrade. Line muffin tin with 12 cupcake liners.

– In a mixer blend together the egg, yogurt, oil and vanilla extract until soft and fluffy.

– In a seperate bowl mix together the flour, sugar, baking powder, baking soda and salt. Gently stir the blueberries into this dry mix.

– With a spatula gently stir the wet mix into the dry mix. Stirring very gently to incorporate the ingredients. It will form a thick batter.

– Fill the muffin cups evenly with the batter ensuring not to burst any of the blueberries.

– Bake for 15-20 minutes, or until the muffins rise and turn slightly golden.

– Leave to cool. Top with cream cheese icing or enjoy just as they are.
