I needed a dessert for dinner tonight, I don’t like the kids to have dessert everyday but its the weekend and it’s Mothers Day so why not make an scrummy Apple Pie!
This is my lovely cousin’s recipe, and it is the simplest yet most effective pie recipe I know. Everything is made from scratch and I put it together in 10 minutes, it was in the oven for 15 minutes, so a delicious apple pie in 25minutes! Now that is amazing.
Not only is it very easy to make, its also very healthy. Using wholemeal Spelt flour, a little butter and plain yogurt to make the dough, the filling of apples and cinnamon makes the house smell divine.
Ingredients-
– 2 tablespoons butter
– 2 tablespoons plain yogurt
– 1 teaspoon baking powder
– 4 -5 tablespoons flour (I used Wholemeal Spelt flour)
– 2 tablespoons brown sugar
– 1 teaspoon cinnamon
– 3 large green apples peeled and sliced thinly
Method-
Preheat the oven to 170 degrees centigrade.
Mix the butter with the yogurt until completely combined. Add in the baking powder and flour mixing until it forms a dough. Add more flour if needed. Split the dough into 2 equal pieces.
Grease a medium sized oven proof shallow pie dish.
Roll out the 2 pieces of dough seperately to form a round circle pastry 1-2mm in depth. Line the greased pie dish with one piece of rolled out pastry.
Now gently place the sliced apples in the dish, I like to work around forming an overlappibg petal pattern, it looks pretty. Once all the apple slices are in the dish sprinkle over the sugar and cinnamon. Cover the apples with the second rolled out piece of pastry. If there is a little pastry left over make some little leave to decorate the top of your pie.
With a fork press down the sides of your pie and poke holes in the top so the inside cooks.
Place in the preheated oven for 15-20minutes, or until the top is a golden brown. Enjoy hot or cold served with custard, ice cream or just as it is!
