Soup of the week! Tomato, mint, chicken stock and pasta starsl

Its Monday morning, the fridge is looking a little bare. The vegetable box has arrived but Ive got other plans for those goodies this week. So I need a quick soup thats filling, easy to make and uses minimal ingredients!

This soup has got to be the simplest soup ever! I actually just cooked up a big pot ready for my little ones lunch.

Ingredients –

-1 small jar of Passata (or just peel and chop up 3-4 large tomatoes)

– 1 knorr chicken pot

– 1 teaspoon of brown sugar

– 2 teaspoons dried mint

– 1 tablespoon Olive oil

– 1/2 mug of Stellette (pasta stars) – if you dont have these spagetti will do, just break the pasta into small pieces

– Sea salt & pepper to taste

Method-

Add the tomatoes and olive oil to a saucepan. Over a medium heat mix until the tomato is cooked. Add 3 mugs of boiling hot water. Mix well. Add the chicken stock, sugar, dried mint and leave to cook. Once almost boiling add in the pasta of your choice. With the lid off leave the pasta to cook in the delicious juices of the soup.

Its ready as soon as the pasta is soft, so 10 minutes!

Enjoy with fresh crusty bread and cheese! xxx
