Sizzling Crispy Salmon baked in the oven

I watched a documentary on tv the other day which looked at the eating habits of families from different countries around the world. Those with the healthiest diets were Norway, Iceland, Sweden and Japan, who had a diet made up of predominantly fish.

Salmon is a super healthy food and can be delicious when cooked correctly, if overcooked it can be dry and tasteless. 

We eat salmon at least twice a week in our household. Its my father’s favourite fish and he has always enjoyed it with broccoli and boiled potatoes. The kids love it served with homemade fries, bulgur rice or brown rice, or pesto pasta. Its so easy to cook! 

This recipe works every time, the salmon will be cooked to perfection. Try it!

Ingredients- (enough for 2)

– 2 Salmon fillets (skinless and boneless)

– Extra Virgin olive oil

– Light Soy sauce 

– Lemon juice

– Sea Salt and ground pepper

Method-

Preheat oven to 200 degrees. Line baking tray with silver foil. Place fillets on to the lightly oiled foil. Drizzle on a little olive oil, a little more soy sauce and plenty of lemon juice. Sprinkle on Sea salt and ground pepper.

Place tray in the centre of the oven for exactly 20minutes.
