Heavenly Chocolate Pots!

This is the ideal after dinner treat! Adapted from Jamie Oliver’s Chocolate Pot recipe, Ive made it suitable for kids by removing the alcohol, but please feel free to add some if you want to give it a little kick. I made it with a little Baileys once and it was yummy.

Served up in pretty little espresso cups, its rich, silky, intense flavour is more than enough, don’t think it won’t satisfy because of its size.

Make them in the morning and allow to set in the fridge for several hours during the day. Or even the night before. Serve with strawberries, raspberries or just as it is.

Ingredients- (makes 4 espresso cups)

– 1/2 pint single cream

– 200grams dark chocolate (70% or more cocoa solids) I use Green & Black (chopped roughly)

– 20 grams butter

– 2 egg yolks

– Optional – 3 tablespoons of Baileys / Brandy / Rum

Method-

Heat the cream in a thick-bottomed pan, but do not allow it to boil. Remove from the heat, then add the broken chocolate pieces in to the cream and allow them to melt, stirring all the time to combine the two ingredients to a smooth consistency. Add the egg yolks and beat lightly to combine with chocolate mixture. Add in the Baileys or Brandy now if you are adding it.
When the mixture is warm stir in the butter until it completely melts.
Carefully pour into the espresso cups and refrigerate for a couple of hours before serving.

Your guests will be complimenting this dessert for years to come!
