Crunchy colourful coleslaw! Without any mayonnaise (shhh don’t tell the kids)

My kids love carrots, my kids love to dip carrots in hummus, mayonnaise and cream cheese. My kids also love coleslaw. At Nandos they will munch away at the coleslaw, but what makes shop bought coleslaw so delicious is the copious amount of mayonnaise that is undoubtedly in it. 

This coleslaw is different, it does have a creamy dressing in it which my kids believe to be mayonnaise but infact its not, its my homemade coleslaw dressing which is so simple and healthy, the kids will love it!

Ingredients-

The veggies –

– 1 medium sized white cabbage 

– 1 red onion 

– 2 carrots peeled

The dressing-

– 4 tablespoons Extra Virgin Olive oil

– 4 tablespoons sunflower oil

– 1 tablespoon red or white wine vinegar

– lemon juice

– 1 teaspoon Dijon mustard

– 1/2 teaspoon honey

– Salt and pepper

Method-

Coarsely grate the carrots, cabbage and onion. Faster in a food processor but easily done by hand too! 

In an empty jar mix together the oils, vinegar, mustard, honey and lemon juice. Put the lid on the jar and give it a good shake. The dressing should ve creamy.

Pour over the veggies and give it all a good mix. Add some salt and pepper. Delicious! 

We had our with poached salmon and boiled potatoes this evening!
