Banana bread with dark chocolate pieces

This has got to be my favourite bake of the moment. Not only is it completely sugar free, it is so moorish that one slice is never enough. But their is no guilt involved because it contains healthy ingredients. Taken from the Flat Tummy Club, it is a recipe which I make over and over again.

Cut yourself a slice at the end of a tiring day, once the kids are in bed, accompanied with a steaming hot cup of tea.

Ive found that the kids prefer these as cupcakes, so exactly the same ingredients but pour the batter into cupcake cases. Just add on some chocolate or butter cream icing to make them more fun for the kids!


– 200g spelt flour 

– 2 tsp baking powder

– 1/2 tsp bicarbonate of soda

– 2 tsp ground cinnamon

– 50g butter

– 50g dark chocolate, roughly chopped

– 4 large bananas (mashed)

– 30ml honey

– 2 eggs


Preheat oven to 180 degrees.

Sift the flour, baking powder, bicarb and cinnamon into a bowl. Add the butter in small blobs and rub in with your fingertips. Add the dark choc pieces.

Mash up the bananas, leaving some bits lumpy. Mix with the honey. Whisk the eggs and add to the banana/syrup and mix well.

Make a well in the flour and pour in the banana mixture. Combine well and transfer to a greased loaf tin. Bake in the oven for about 50 minutes.
