A healthy yummy snack for pick up time!

I love oats! Any type of oats; steel cut, Scottish, old fashioned, even the quick and instand variety like ‘Readybrek’. They are filling, easy to use and can be very tasty.

My kids love to snack, especially after school, before dinner, they want a snack. What better snack than something which includes oats. These oatmeal & raisin cookies won’t just satisfy their hunger, they are also very good for them!

Ingredients –

– 3/4 cup butter

– 1 cup light brown sugar

– 1 large egg

– 3/4 cup of flour (i use Spelt Flour for everything )

– 1/2 teaspoon baking soda

– 1/2 teaspoon salt

– 1/2 teaspoon cinnamon

– 3 cups old fashioned oats

– 1 cup raisins (you can add any chopped dried fruit – apricots, dates, cranberries)

Method-

Line a large baking tray with baking paper and set oven to 170 degrees. Mix together butter & sugar until fluffy. Add egg and blend in.

In another bowl mix together the flour, baking soda, salt and cinnamon.

Slowly add the flour mixture to the cream mixture and mix until all the dry ingredients are incorporated into the wet.

Finally stir in the oats and raisins ( or other dried fruits).

These cookies love to spread so spoon onto the baking tray 2cm apart to give them space. You should have 20 cookies in total.

Bake for 15mins or until they are golden brown. Let them cool on a wire rack.

Super moorish, super healthy!
