Fabulously fruity flapjacks (with dark chocolate chips)

My children love chocolate, but I needed a healthy snack to give them which had a little less chocolate and more of what is healthy. They love porridge so I thought flapjacks were the way to go. To be honest the first batch did not go down too well (they had no chocolate chips in).

But the second time around with the healthy ingredients, plus (quite) healthy dark chocolate chips, they were a hit!

Here is the recipe! Great for breakfast on the go, lunch boxes and with a cup of green tea! The best thing is they have no sugar whatsoever 😃

Ingredients- 

  • – 50gr of butter
  • – 3 tablespoons of honey 
  • – 2 ripe bananas, mashed
  • – 1 apple, peeled and grated
  • – 250g rolled oats
  • – 85g apricots, chopped
  • – 100g raisins
  • – 85g mixed seeds (I used my healthy seeds mix – see previous posts for mix)
  • Method-
  • Heat oven to 160C. Grease a shallow lasagne dish. Heat the butter and honey in a small pan until melted. Add the mashed banana, apple and a 100ml of hot water, and mix.
  • Put the oats, the dried fruit and the seeds into a large bowl. Pour in the combined banana and apple and stir until its all mixed well. Pour into your greased dish. Bake for 45mins until golden. Leave to cool in the tin. 
  • Cut into individual sized pieces and keep in an airtight container in the fridge.
