Simple easy peasy quick pickles ðŸ˜ƒ

Pickles needn’t take weeks to be ready to eat! I found this super recipe on ‘Abel & Cole’ and I actually think these pickles taste much nicer and fresher than their store bought counterparts.

Ingredients –

– 2 tablespoons sugar

– 1 tablespoon boiling water

– 4 tablespoons vinegar (I used red wine vinegar)

– 1 large cucumber (sliced)

– Salt & pepper

– dried mint

Method –

In a small bowl dissolve the sugar in the boiling water, add the vinegar, mix.  Add in the cucumbers and make sure they are all covered in the lovely sweet vinegar. Sprinkle on salt, pepper & mint. Spoon it all into a jar. Close lid, give it a good shake, then into the fridge for at least 3hours. Voila! Pickles!

I tried these after 3hrs in the fridge, not only are they totally pickley! They are also crunchy and fresh. Yummy with some cheese & crackers. I won’t be buying shop bought pickles for a while.
