Overnight porridge in a jar for those with little time to spare!

I love porridge! For my kids and for me. So filling, warming and healthy at the same time. For the kids its not so difficult to make as they love ‘Readybrek’. I don’t have a microwave so the ‘Oat so Simple’ sachets were out of the question, and I have tried these before and found them messy, with the sachet, it always seemed to leak. I tried the old fashioned method, oats and milk in the saucepan, but I just don’t have the time. As any parent knows mornings are hectic enough without having to watch a boiling pan of porridge. The perfect solution – Overnight Oats!!

Ingredients – (makes two jars of porridge)

– 1 cup of oats

– 1 cup fat free yogurt

– 1/2 cup almond milk (or skimmed)

Now the fun starts! Add any of the following, or go crazy and just add all of them!

– 1 tablespoon Healthy seed mix (see previous posts for recipe)

– 1 teaspoon cinnamon

– 1 tablespoon of raisins / chopped dried apricots/ chopped dried mangoes

– Good drizzle of honey

– Handful of blueberries / raspberries/ blackberries

Method –

Mix all the ingredients together, adding the yummy extras of your choice. Carefully pour the mixture into the two jars. Place in fridge. Keeps up to 3-4days!

In the morning just open the jar and enjoy! Or if you prefer it warm, add a little warm milk.
